Cheats Pancit

A delicious and super simple take on a Filipino favourite. My ‘cheats’ pancit uses pork mince whereas mince isn’t typically used in authentic pancit variations.

Ingredients

  • 500g pork mince

  • 1 small brown onion (finely diced)

  • 1 tsp minced garlic

  • ¹⁄₂ tsp chilli flakes

  • 1 tbsp olive oil

  • 100g green beans (sliced at an angle into small pieces)

  • 3-4 carrots (sliced into small matchsticks)

  • 100g cabbage (chopped / shredded into small pieces)

  • 2 tbsps soy sauce

  • 1 tsp rice wine vinegar

  • 100g vermicelli rice noodles

  • Salt and pepper to season     

To Serve

  • 1 wedge of lemon

Method

  1. Prepare your vermicelli noodles by covering them with room temperature water in a bowl. Cover bowl and let them sit for 15 minutes then strain water and set aside.

  2. In a large wok or fry pan, sauté onion over medium heat in olive oil until soft. Add minced garlic and chilli flakes.

  3. Add pork mince and cook until lightly brown. Season with salt and pepper.

  4. Add carrots, green beans and cabbage and carefully toss with the pork mince mixture. Cook for 10minutes or until the vegetables start to soften.

  5. Add your vermicelli noodles followed by soy sauce and rice white vinegar. Stir until noodles are well coated and combined within the vegetables and pork mixture.

  6. Cook on high heat for 5 minutes then bring it back down to medium heat for another 5 minutes. Season with more salt and pepper / soy sauce if necessary then you’re done.

  7. Serve with a wedge of lemon - a squeeze of lemon juice really makes a difference - enjoy!
