Spaghetti Bolognese
A favourite for a reason. This is my take on the classic comfort dish.
Ingredients
500g beef mince
500g spaghetti
700g passata (1 large jar)
1 onion (diced)
3-4 tomatoes (diced)
1 tbsp tomato paste
2 tsps minced garlic
2 tsps dried oregano
½ tsp chilli flakes
1 handful of fresh basil leaves
Salt and pepper to season
Method
Start by heating olive oil in a pot on medium heat then sauté diced onion and minced garlic. Add chilli flakes and continue to sauté until onions start to go translucent.
Add beef mince and cook until lightly brown. Add salt, pepper (as preferred), then add the oregano.
Add diced tomatoes and cook until soft. Add tomato paste and stir in for 1 minute. Add passata, stirring gently until well combined.
On low heat, simmer bolognese for at least 1 hour. Add fresh basil leaves around 30 minutes in. Season with salt and pepper to preference as it cooks.
After at least an hour, in a separate large pot bring water to the boil. Add spaghetti of preference and cook until al dente (around 8 - 12 minutes). Reserve ½ cup of pasta water.
Strain spaghetti then add to the bolognese while it’s still simmering on low. Add the ½ cup of pasta water. Stir gently until the bolognese coats the spaghetti evenly.
Serve then top with fresh basil or grated parmesan (optional).
