Homemade Crumpets
A token of patience, these homemade crumpets are delicious and reminiscent of the same comforting taste we know and love.
Ingredients
1½ cups plain flour
1 cup warm milk
½ cup room temperature water
1¼ tsp instant yeast
1 tsp white sugar
½ tsp salt
½ tsp baking soda
Method
In a large bowl mix the warm milk, room temperature water, yeast and white sugar. Leave for 5 minutes.
Add the flour and salt then whisk until you have a smooth, thick batter.
Cover and leave somewhere mild to rise for 1 hour. It should become bubbly after 1 hour.
Sprinkle ½ tsp baking soda on top then gently whisk the batter. Leave for 5 minutes.
Heat a lightly oiled pan over low heat.
Using egg rings (non-stick or lightly oiled) spoon about 2–3 tablespoons of batter into each ring. Make sure it’s filled flush to the top of the ring.
Cook for about 5–7 minutes or until little holes start appearing on top and it looks mostly set.
Remove rings and then flip for 30–60 seconds just to lightly brown the top.
Repeat until you finish the batter.
Serve with butter or your choice of spread.
